I had a very simple dinner for a visiting friend on Sunday night. BBQ'd Pulled Pork Sandwiches and this great summer salad. My only deviation from the original was to add chopped avocado to the mix which was great.
The dressing was the winner in this recipe so futzing around with some of the ingredients didn't really matter. Though quite simple the dressing had tons of flavor and it looks good with all the bright colors.
Let's talk about some of the benefits of Garbanzos. They contain high levels of folate which tests show are beneficial in:

- Help prevent homocysteine build-up in your blood
- Support cell production, especially in your skin
- Allow nerves to function properly

About this magnificent salad...saw it on Kaylyn's awhile back stuck it to my delicious and promptly forgot about it.
Sister mentioned it the other day and I had all the ingredients so I made it as well. Moon is right it's the dressing that is the winner here. This is a wonderful, easy, and adaptable to your tastes and pantry. Good sald!

I'm always fascinated by the health benefits of fruits and vegetables. Americans eat so much processed food that too often I think we forget how much we're missing!

I love Garbanzo AND Chick Peas, but funnily enough you never see them in the same dish together...looks yummy!
