Not enough butter in your diet? We have the answer

Buttercream Frosting! I was feeling like the blood through my arteries was moving much to fast so I decided to make honest to goodness buttercream frosting. This is a Cook's Country recipe and it's pretty easy though I'm sure very high in cholesterol. This recipe makes enough for a small cake or about 24 cupcakes. I cut it in half for 15 and I still had a bit left. What ever to do with a 1/4 cup of frosting?

Buttercream Frosting
4 large eggs
1 cup granulated sugar
2 teaspoons vanilla extract
pinch table salt
1 pound unsalted butter, softened and each stick cut into eights

Combine eggs, sugar, vanilla, and salt in bowl of standing mixer, place bowl over pan of simmering water. Whisking gently but constantly, heat mixture until thin and foamy and registers 160 degrees on instant-read thermometer.

Beat egg mixture on medium-high speed with whisk attachment until light, airy, and cooled to room temperature, about five minutes. (I put an ice pack around the outside of the bowl because it was pretty hot in my kitchen.) Reduce speed to medium and add butter, one piece at a time. (After adding half the butter, buttercream may look curdled; it will smooth with additional butter.) Once all butter is added, increase speed to high and beat 1 minute until light, fluffy, and thoroughly combined. (Can be covered and refrigerated up to 5 days.) Do let it warm up and restir to make it fluffy and spreadable again.

I frosted the cupcakes and sprinkled some toasted sugared slice almonds. Just perfect. I kept them refrigerated until a few minutes before serving because that butter sets up solid when cold, just like it does in your arteries.

baby shower food

first off, my apologies for being m.i.a. on this blog for so long. june 12 - july 31 was a black hole in my life due to some crazy s&*% going on at work - thank you department of homeland security. then i took a week off to hibernate. then i tried my hand at a little party planning and small-time catering, which kept me busy cooking, but with no time to post.

anyway, the reason for the party planning is that my good friend sarah is having her first baby, so i was happy to co-host a baby shower with another friend. sarah's expecting a little boy and, as she and her husband are true bruins, the colors planned for the new addition to the family is blue and yellow. i went with a rubber ducky theme for the party...

for the food, i planned a pan-asian theme, which was a good reason to make cool salads and hors d'oeuvres that would also complement the family specialty egg rolls and fried rice that sarah's sister planned to make. here's what the final menu looked like:

the chicken salad didn't follow any particular recipe, just shredded iceberg lettuce and napa cabage, topped with shredded chicken (costco rotisserie chickens rule!), sliced almonds, toasted sesame seeds, scallions and fried wontons and served with feast from the east salad dressing - a westside favorite. the asian beef noodle salad was a combination of a few different recipes for the dressing for the bean thread noodles and the sliced beef and served on a bed of spinach and garnished with basil, mint, cilantro, carrots and scallions.

for dessert, we had cupcakes...

the cupcakes were yellow cake with buttercream frosting piped on with a pastry bag and topped with rubber duckies molded out of wilton's candy. mooncrazy found me a cool cupcake stand to make out of styrofoam disks, ribbon and wrapping paper. to be honest, i cheated with the buttercream and used frostin' pride, which comes in a milk carton in the frozen section at smart and final. you thaw it out and then whip it up with your mixer. it's very easy and the frosting is lite and not overly sweet.

anyway, a good time was had by all and there were tons of leftovers to eat all week!

Guest Chef: Ingrid

Welcome to our guest chef Ingrid. Here she is busy in her kitchen attending to my four-course birthday dinner she and her family hosted for me last weekend.

It was all quite yummy. Here is one of the appetizers served.

Stuffed Mushrooms

Everything You Will Need:
1/2 pound of fresh Italian sausage (removed from the casings)
1 1/4 cups of onion (finely chopped).
1 tablespoon of olive oil
2 tablespoons of green bell pepper (finely chopped)
1 pound of fresh mushrooms(medium-sized) (save the caps, remove the stems and chop finely)
1 teaspoon salt, freshly ground pepper
1 3-ounce package of cream cheese
2 tablespoons of butter (melted)
1/4 cup of Italian seasoned breadcrumbs
fresh chopped parsley for garnish

In a large skillet, cook the sausage in the olive oil over medium heat for five to six minutes, stirring occasionally with a wooden spoon to crumble the sausage. Add the chopped onion, green bell pepper, mushrooms stems, the salt and pepper to taste. Continue to cook for six or seven minutes or until the onion and bell pepper are tender. Turn off the heat and stir in the cream cheese. Fill the mushroom caps with the sausage.

In a small bowl, thoroughly mix the butter and the breadcrumbs. Press the stuffed mushroom
caps firmly into the buttered breadcrumbs. Put two tablespoons of water into a nine inch by thirteen inch glass baking dish. Place the mushroom caps in the dish, breaded sides up. Pre- heat the oven to 350 degrees. Bake for twenty to twenty-five minutes or until the breadcrumbs are brown. Sprinkle on fresh chopped parsley and serve.

The finish to the meal were these beautiful cupcakes done by one of our other guest chef's Teri.

Tequila cupcakes...how cool is that

foodie blogger friend Nic over at Baking Sheet posted this recipe awhile back....you can take this to the bank, they are luscious! Not at all alcholly tasting at all. Yes there is a hint of tequila, so no don't be making these for your kiddies birthday gatherings.

I did not have the suggested green sprinkles so I used finely chopped pistachio nuts. I also used 1% milk instead of soy milk.

So there ya have it, a tried and true taste tested yummy dessert for maybe a SuperBowl gathering GO COLTS!!!

Go look at the photo Nic posted, cause I'm sure hers is so much better than mine had I remembered to take one.
Think I will post a Super Bowl menu that I need to plan today cause my sweet husband invited some folks over......stay tuna'd.
And please don't forget PBE's Pullet Surprise
