Jalapeno cheddar cornbread

In one of Ina Garten, The Barefoot Contessa, cookbooks is a wonderful recipe for cornbread. Since I'm only typing with one hand--the other is in a cast, I'll only direct you to her site. You might find it on Food TV.

What I will take the time to say is she has a different method for this hefty quick bread. After you lightly mix all the ingredients you let it rest for 20 minutes. This takes the cornbread to a whole new level; a wonderful light, almost custard-like texture considering it is weighed down with lots of eggs, butter and cheese.

Cheese and green onions are the main flavor here but if you like your food spicy you'll need to increase the jalapenos. Most of my guests thought it was enough, just a hint, I on the other hand (which is throbbing right now) like the chili to meet me before I take a bite. You be the judge on the amount.

I'm so sorry to hear about your hand being in a cast. Did you break it or have surgery?

I just looked at Pioneer Woman's web site and she had this awsome looking tomato soup. Wonder how your cornbread would be with tomato soup?

That looks delicious. I really like Ina Garten and have one of her cookbooks, so if it's her recipe I'm sure it IS delicious!

you should start making comments like, "i single-handedly made you this corn bread." (i'll admit to stealing that from david sedaris.) but maybe you should put a tag "single-handed" on all of the posts for food you cooked while you're wearing the cast!

folks this is sister doodles telling you that Moon is far from stupid just fun loving and that's what we were doing.

Now bout that cornbread it is so good. And Shirley I think it goes well with tomato soup why not.we had it with chili.

Deborah-I hope you post your White Chicken Chili. I had it once at a potluck and never got the recipe. It was very tasty.
