
I couldn't bear to make the Crown roast of Spam with potatoes so I thought I'd do the beets as I remember our mom bringing them to picnics when I was a kid.
I brought them to a 4th of July BBQ and no one really got into them. Oh well, I like them though I had to tweek the recipe a bit, don't I always!
Pickled Beets
About four medium cooked beets, and reserved cooking liquid
1 cup vinegar
1 cup cooking liquid
2 tablespoons brown sugar
1/2 teaspoon salt
2 cinnamon sticks
1/2 teaspoon cloves
Heat to boiling and pour over 2 cups sliced cooked beets. Let stand overnight.
I added the eggs but could not find a recipe for them.
Remove beets and add about six hard-cooked eggs. Refrigerate overnight. Serve together.
Now this recipe was not sweet enough for my taste so I added more sugar.
I was watching Ming Tsai over the weekend and he had 1000 year old eggs...I thought "hrm...those look super gross!" lol Beet-eggs I might try :)
ReplyDeletethe 1000 year old eggs don't taste as bad as you think, but i definitely had to close my eyes when eating them because they look awful! mooncrazy will tell you, however, that i gave those beet eggs a wide berth at the 4th of july party!

ReplyDeleteI saw eggs like your beet eggs actually just the other day in the newest issue of Eating healthy.... 'cept they were more pink than purple. =)
I think if you like eggs and you like beets you would like this........but sister moon and I had the discussion that the reason some folks won't eat pickled beets and eggs is the color the eggs - they are pink. But being the odd one I like them.
